Red Whale Coffee, Picaroons Brewery, Speerville Flour Mill

Here is a true collaboration of local New Brunswick companies coming together to make a truly local product, Sean Dunbar from Picaroons, Sean Boyd from Red Whale Coffee and Todd Grant from Speerville Mills!
Picaroons Brewery from Fredericton has made a rendition of there popular stout “Timber Hog” and have added some special local ingredients i.e. 5 lbs Red Whale Espresso, 100 lbs of Speerville Oats and the love and care of the Picaroons Brew Master.
This collaboration has been the result of several years of Sean from Red Whale making suggestions to Sean Dunbar of Picaroons to make a beer with Red Whale Coffee in it.
It has happened this November 2008 and the result is a fantastic beer with great body, fine balance and the light sweetness of dark chocolate!
Chef Jessie Vergen of Ale House, Saint John is featuring the “Timber Hog Stout” and will be creating his own spin on culinary delights to have the stout accompany.

Cirque de Soleil’s Saltimbanco Tour & Red Whale Coffee

Red Whale Coffee is the coffee suplier for the catering being done for the Saltimbanco Tour now in the US. The feedback has been great and the crew loves the coffee and teas. We have even created a special label and blend for the Saltimbanco Tour. We had a chance to see the tour when it was here in Saint John and it was a great show.
2 Years ago we went to the Ka Show in Vegas and again what a spectacular show! Keep up the great work!!

Dr. Ernesto Illy “The God Father of Espresso” Passes @ 82

Its was a sad day this last Sunday February 3rd, 2008 when Dr. Ernesto Illy past away. Since my involvement in the coffee industry I have always looked up to Dr. Illy. I really enjoyed hearing Dr. Illy speak about coffee and more so espresso. To me Dr. Illy represented the purest form of espresso and the passion for the best.

Cheers to you Dr. Illy your passion will live on in may of us!

A-khord Saint John & Red Whale Coffee

Check out A-Khord, what a great location to see a band or take in some comedy. A-khord in Saint John is now open and serving Red Whale Coffee. You can drink Red Whale Coffee and enjoy the music or comedy scene. I am told A-khords website will be up and running soon so keep a look out for it. Some folks at Jamhub have been keeping things up to date for A-khord jamhub is a great spot to see whats happening at A-Khord and in Saint john.

Red Whale Coffee Company is here to provide the best possible coffee. RWCC’s philosophy is first starting with the best beans possible roasting them to perfection (not over roasting) and then assuring that they stay as fresh as possible with state of the art packaging.

I use a comparison to describe our roasting practices; we roast our coffee like a pastry chef caramelizes a cr�me brulee. If you over caramelize a cr�me brulee you might as well throw it out and start over. The bitterness and acrid flavors come out of the sugars if you over-caramelize them or burn them. The same is true for coffee. Coffee has natural sugars, some coffees more than others and the same is true for the caffeine content in coffees. When we roast coffees the sugars caramelize naturally in the coffee so you might taste a natural sweetness.

The grind and brewing are the next most important parts of our quality control. The RWCC’s coffee brewers are set not to brew if the water temperature falls below 200 degrees. We try and keep the brew temperatures between 200 and 203 degrees.

We love our coffee but many don�t understand the scientific aspects of roasting. Flavor profiles are extremely important and this carries over into the coffees that we roast.
